Hey readers!  My article on hot dogs in the Twin Cities is not an exhaustive search.  There are too many cafe and restaurants to visit.  So, I would like you to leave a comment on this blog which establishments have the best dogs in town.  What places do you go too?

Corn Fungus Ice Cream

I hope everyone that read my latest column about corn mushrooms—or huitlacoche (whee-tla-KO-cheh) found it interesting.  After tasting huitlacoche, I asked many cooks on Isla Mujeres, Mexico what is their favorite recipe using this corn mushroom.  Most said they enjoy it in Ice Cream!  So, I found a recipe and thought I would paste it here just in case anyone is craving ice cream with corn fungus.  Enjoy! 

 Huitlacoche Ice Cream

6 ounces Huitlacoche
2 tablespoons unsalted butter
1 cup milk
3 cups heavy cream
1 1/8 cups sugar
3/4 cup egg yolks (9-12 eggs)
1/4 teaspoon sea salt
A jigger of sweet sherry

In a heavy saucepan melt the 2 tablespoons butter. Add the mushroom and cook over a medium flame until the mushroom is shiny and looks fried. Then add the salt and mix thoroughly. Place in a blender and then strain it through a fine sieve. Return the mushroom to the same saucepan; add the milk and heavy cream and bring to a boil. Reduce heat. Beat egg yolks with the sugar until ribbony. Fold into the saucepan. Let the mixture simmer until it thickens but do NOT boil. Strain again through the sieve. Cool mixture over ice and then pour it into an ice cream machine. As the ice cream begins to thicken, add the sherry. Yield: 1 quart of ice cream and serves approximately 8. Serve with a fresh berry sauce (raspberries, strawberries, blueberries, or tropical fruits).

Finally Summer is Here!

Welcome Summer!  The first culinary holiday coming up is the 4th of July.  My partner Chad, I and our daugther Heather are heading to Lake Bel Taine up by Park Rapids and Walker, MN.  We stay for an entire week.  It’s a fun week of swimming, sunning, biking, and lots of food.  The lodge hosts a large potluck.  Everyone staying at the lodge participants and we enjoy wonderful recipes and a large fish fry. 

I also started the Beagle Books 4th of July Pie Contest last year.  It began to raise money for the Park Rapids Library which had its budget cut to shreds.  Last year we raised almost $1,000.00.  This year we’re hoping for so much more.  We charge an entry fee for each pie entered.  After the judging the pies are auctioned off before the 4th of July Parade.  Hopefully this year we raise 3x as much.  If you’re in the neighborhood enter a pie or bid on one! 

I hope you and your friends/family enjoy the 4th of July holiday.  Bake pies, cook hot dogs and light a sparkler or two.

Filming Food Network Challenge in Orlando!

Hey happy readers and eaters!  I’m currently in Orlando, Florida competing in the National Pie Championship during the American Pie Festival.  Well, things have changed.  The Food Network contacted me last week and asked if I would join in for another Food Network Challenge.  Of course I said “yes” in a flash. 

 Once we arrived in Orlando, Food Network contacted me to let me know that I would need to make duplicates of the pies that I am creating for the National Pie Championship.  I’ve entered 10 pies (Watermelon, Pineapple, Blueberry, Trail Mix and many more).  This means I must prepare 20 pies this weekend.  Can I do it? 

I’ve been creating my entries for the National Pie Championship and have all my grocery ready for the Food Network Challenge.  Come back next week and see how I did.

Oscar Party at Innuendo!

Oh my gosh! Oscar night at Innuendo was incredible. Thank you to everyone that attended and stayed until the very last award was given out. The Killer B’s Entertainment was fun and they were dressed smart! Tawnja Zahradka from Tawnja Am on the CW arrived dressed to the nines and filmed for her television show. Visit www.Tawnja.com

I was the host of this incredible evening and we gave away tons of prize during commercial breaks. Three grand prizes were given away and we’re already planning next year’s party to be even larger.

A big hug and a kiss go out to Sean and Jim Fetterman and the staff and crew at Innuendo. They worked their cute behinds off all evening and made all the guests very happy with food and drink.

Who needs to go to Hollywood?
